An Eau-de-Vie made from Mangos is a rare thing indeed. This unaged fruit brandy is made from Mangos that are imported but not suitable for sale in supermarkets and are considered waste. We recover these from the pack house and ferment and distill them to make this incredibly rare and unusual spirit.

Eau-de-Vie is the French term for ‘water of life’ and is a phrase we use to refer to an unaged fruit brandy. Doing what we do and making spirits with only locally sourced surplus produce, what business do we have making a Mango spirit?!

Well the answer is our obsession with having mangos year round! We work with supermarket packhouses to recover produce which is not able to be sold in store. In the case of Mangoes this means skin blemishes mainly, and amounts to about a ton per week of waste. We ferment these fruit (see video below) and then distill them to recover the alcohol and aromatics in a crystal clear and highly aromatic spirit.
