London Dry Gin

Greensand Ridge Gin & Tonic

50ml Greensand Ridge Dry Gin
150ml Indian Tonic Water
Fresh Bay Leaf & Juniper Berries

Add a generous amount of ice to the glass, add the gin and a good quality, plain tonic. Garnish with a few juniper berries and a fresh bay leaf. Serve with a straw.

BRAMBLE

50ml Greensand Ridge Dry Gin
25ml Lemon Juice
15ml Sugar Syrup
10ml Creme de Mure
15ml Port (opt.)

Combine the gin, lemon and syrup in a shaker with some ice, shake well and pour into a lowball glass filled with crushed ice. Combine the port and liqueur and add gently, allowing it to bleed through the ice. garnish with fresh blackberries.

Classic Dry Martini

50ml Greensand Ridge Dry Gin
15ml Dolin Dry Vermouth

Chill your martini glass. Shake ingredients with generous ice and pour. Garnish with a fresh bay leaf and leaf-shaped lemon peel.

Bees Knees

50ml Greensand Ridge London Dry Gin
25ml Runny Honey
15ml Lemon Juice

Add all ingredients to a cocktail shaker (water the honey down slightly with a splash of hot water if needed). Shake and strain into a lowball glass filled with fresh ice cubes. Garnish with a slice of lemon.

 
 

Raspberry Ghost

Raspberry ghost & tonic

50ml Raspberry Ghost
150ml Tonic (try Mediterranian)

Add a generous amount of ice to the glass, add the Ghost and a good quality tonic. Garnish with fresh mint leaves and a slice of lemon or fresh raspberry.

The sour ghost

50ml Raspberry Ghost
20ml Lemon Juice
25ml Sugar Syrup
20ml Egg White*

Shake ingredients to emulsify before adding generous ice and shaking well. Pour over ice and serve with lemon peel and pink peppercorns.

Clover Club

50ml Greensand Ridge Raspberry Ghost
25ml Sugar Syrup
20ml Egg White
20ml Lemon Juice
4 Fresh Raspberries

Chill your coupe glass. Add raspberries to a cocktail shaker and muddle. Add remaining ingredients to the cocktail shaker. Shake with 1 ice cube until you can no longer hear the ice bouncing around in the shaker. Open up the shaker and fill with ice, shake again until ice-y cold. Double strain into your coupe glass. Garnish with a raspberry.

Dry Raspberry Martini

This martini deceptively looks like a classic dry, but the raspberry is unmistakable in this powerful serve!

50ml Raspberry Ghost
15ml Dolin Dry Vermouth

Chill your martini glass and spritz well with lemon peel. Shake ingredients with generous ice and pour. Garnish with lemon twist.

Espresso berry martini

The raspberry comes through subtely in this version of the unfashionable espresso martini, but it's a fine addition.

50ml Raspberry Ghost
20ml Espresso
25ml Coffee Liquer

Shake the ingredients well over ice and strain into a chilled martini  glass. Garnish with three berries on a cocktail stick.

 

Wealden Rum

Rum & Apple

50ml Greensand Ridge Wealden Rum
150ml Apple Juice
Fresh Mint Garnish

Fill a glass with ice, add the Wealden Rum & the Apple Juice. Garnish with fresh mint. We find the sharpness in a cox apple juice works particularly well. If your apple juice is very strong sweet, go half and half with soda water.

Kentish Rum Punch

2 parts Apple Juice
2 parts Sparkling Cherry Juice
3 parts Greensand Ridge Wealden Rum
2 parts Runny Honey
1 part Lemon Juice

Add all ingredients to a large punch bowl or jug filled with ice, you may need to water down the honey with a splash of boiling water. Top up with some fresh fruits; citrus, apples & cherries work well!

Rum & Ginger

50ml Greensand Ridge Wealden Rum
100ml Ginger Ale
Lime Wedge Garnish

Fill a glass with ice, add the Wealden Rum & the ginger ale. Garnish with a lime wedge. We find the sharpness in a cox apple juice works particularly well. If your apple juice is very strong sweet, go half and half with soda water.

Wealden Rum Old Fashioned

50ml Greensand Ridge Wealden Rum
1 Barspoon Runny Honey
3 Drops Black Walnut Bitters

Add the honey to a mixing glass, you may need a splash of boiling water to loosen up the honey. Add half the rum, the bitters and a generous amount of ice. Stir to dilute. Add the remainder of the rum and a little more ice, when at desired flavour, strain into a lowball glass filled with ice cubes. Garnish with an orange zest.



apple brandy

Kentish Cooler

35ml Greensand Ridge Apple Brandy
15ml Elderflower Liqueur
½ Lemon - Cut into 3 wedges
1 barspoon Caster Sugar
Top up with Soda or Sparkling Water

Add 3 lemon wedges to a highball glass with the caster sugar and muddle. Add the apple brandy & the elderflower liqueur. to a highball glass and mix to spread the lemons through the glass. Top up with soda or sparkling water and add more crushed ice to crown it. Garnish with apple slices.

Apple Brandy 75

30ml Greensand Ridge Apple Brandy
2 Dashes Sugar Syrup
15ml Lemon Juice
60ml Sparkling Wine

Chill your champagne flute. Add apple brandy, sugar syrup and lemon juice to a cocktail shaker. Shake and double strain into the champagne flute. Gently top up with the sparkling wine.

Apple Crumble

35ml Greensand Ridge Apple Brandy
5ml Amaretto
45ml Apple Juice
15ml Lemon Juice
10ml Sugar Syrup

Add all ingredients to a highball glass filled with crushed ice. Mix and add more crushed ice to crown it. Garnish with apple slices.



Rye Cask Gin

Rye Cask Gin & Ginger Ale

50ml Greensand Ridge Rye Cask Gin
150ml Fever Tree Ginger Ale

Fill a glass with ice, add the Rye Cask Gin & the Ginger Ale. Garnish with a lime wedge.

Martinez(ish)

60ml Greensand Ridge Rye Cask Gin
15ml Sweet Vermouth
7.5ml Port
1 Dash of Angostura Bitters

Chill your Martini glass. Add all ingredients to a mixing glass with a generous quantity of ice. Stir to dilute, when at desired flavour, strain into the chilled martini glass. Garnish with a lemon zest.

Rye Cask Negroni

30ml Greensand Ridge Rye Cask Gin
25ml Sweet Vermouth
30ml Campari

Add all ingredients to a mixing glass with a generous quantity of ice. Stir to dilute, when at desired flavour, strain into a lowball glass filled with ice cubes. Garnish with an orange slice.



PX Cask Gin

PX & Ginger Ale

50ml Greensand Ridge PX Cask Gin
150ml Fever Tree Ginger Ale

Fill a glass with ice, add the PX Cask Gin & the Ginger Ale. Garnish with an orange wedge.

PX Toddy

50ml Greensand Ridge PX Cask Gin
125ml Apple Juice
2 Star Anise
1 Cinnamon Stick
6 Cloves
½ Thumb of Fresh Ginger

Add apple juice & spices to a saucepan and heat on a low heat to infuse all flavours into the apple juice. Strain into a heat-proof glass with the PX cask gin. Garnish with an orange wheel & spice of your choice (we like it with the star anise). Feel free to lengthen with a little boiling water if you would like more dilution.

PX Cask Negroni

30ml Greensand Ridge PX Cask Gin
30ml Sweet Vermouth
30ml Campari

Add all ingredients to a mixing glass with a generous quantity of ice. Stir to dilute, when at desired flavour, strain into a lowball glass filled with ice cubes. Garnish with an orange slice.
