Eau-de-Vie is the term we used for an unaged fruit brandy. When we ask for a Brandy in the pub we are asking for a grape brandy - distilled wine. Well, you can make Brandy from any fruit but we tend to use the term Brandy for a fruit spirit that has been aged in oak casks - as we do with our Apple and Plum Brandies - hence the colour.

In Eastern Europe where Eaux-de-Vie are more common than Gin, Apricot is often considered the finest in the category. It has a very honest flavour. That is, the spirit tastes like fresh apricots, nothing more, nothing less.

This spirit is usually drunk neat and cold, sipped to appreciate the flavour and allow the taste to grow and develop on the palate. However it is also wonderful served in place of Gin in a range of cocktails such as the classic French75, a Sour, a Collins, or a Martini.

As with all our spirits it is distilled with renewable power, with no chemicals, with no single use water and carbon neutral and plastic free.

Collecting another load of apricots from the local farmer. There’s a lot of shovelling involved in this job.

Apricot pulp vigorously fermenting in the summer heat. A little too vigorous!
