Greensand Ridge Gin & Tonic

The perfect serve for our signature gin!

50ml Greensand Ridge Dry Gin
150ml Indian Tonic Water

Add a generous amount of ice to the glass, add the gin and a good quality, plain tonic. Garnish with a few juniper berries and a fresh bay leaf. Serve with a straw.

The sour ghost

This is the perfect serve for our Raspberry Ghost equx-de-vie. Phenomenal.

50ml Raspberry Ghost
20ml Lemon Juice
25ml Sugar Syrup
20ml Egg White*

Shake ingredients to emulsify before adding generous ice and shaking well. Pour over ice and serve with lemon peel and pink peppercorns.

Dry Raspberry Martini

This martini deceptively looks like a classic dry, but the raspberry is unmistakable in this powerful serve!

50ml Raspberry Ghost
15ml Dolin Dry Vermouth

Chill your martini glass and spritz well with lemon peel. Shake ingredients with generous ice and pour. Garnish with lemon twist.

Raspberry ghost & tonic

The Raspberry Ghost works great with tonic as a long drink.

50ml Raspberry Ghost
150ml Tonic (try Mediterranian)

Add a generous amount of ice to the glass, add the Ghost and a good quality tonic. Garnish with fresh mint leaves and a slice of lemon or fresh raspberry. Serve with a straw.

Classic Dry Martini

The choice of the alpha male with a clear diary. But a winner nonetheless.

50ml Greensand Ridge Dry Gin
15ml Dolin Dry Vermouth

Chill your martini glass. Shake ingredients with generous ice and pour. Garnish with a fresh bay leaf and leaf-shaped lemon peel (clip to glass with a baby clothes peg).

Espresso berry martini

The raspberry comes through subtely in this version of the unfashionable espresso martini, but it's a fine addition.

50ml Raspberry Ghost
20ml Espresso
25ml Coffee Liquer

Shake the ingredients well over ice and strain into a chilled martini  glass. Garnish with three berries on a cocktail stick.

Chapel Place Clover Club

Similar to a sour, but with a lovely pink hue and served straight up.

50ml Raspberry Ghost
25ml Sugar Syrup
20ml Egg Whites*
20ml Lemon Juice

Chill the coupe glass. Muddle 4 raspberries withe the sugar syrup and strain into the shaker. Add gin, lemon and egg white and shake to emulsify. Add the ice, shake well and strain into the glass. Garnish with a raspberry.

45WEST RASpBERRY GHOST

Wild turkey, Greensand Ridge Raspberry Ghost, crème de mûre, rhubarb bitters, maple syrup, fresh raspberries, citrus with a touch of Malbec.

Garnish: Fresh Raspberries

WINTER BRAMBLE

The addition of port to this classic summer gin cocktail takes it to a whole new season.

50ml Greensand Ridge Dry Gin
25ml Lemon Juice
15ml Sugar Syrup
10ml Creme de Mure
15ml Port

Combine the gin, lemon and syrup in a shaker with some ice, shake well and pour into a lowball glass filled with crushed ice. Combine the port and liqueur and add gently, allowing it to bleed through the ice. garnish with a fresh bay leaf and berries.

 

*Egg whites - i'm not dogmatic about always using fresh egg whites. The pasurised egg whites you can get in cartons are good, but I keep a jar of powdered egg whites in the distillery as well in case of emergency. When using these, make sure you get 100% dehydrated albumin without flavouring, and rehydrate only a decent pinch in your shaker with a tablespoon of warm water before adding the other ingredients. Look for 'pure egg white powder' on amazon.
